What is it about ?
The Korma or Kurma spice blend sold here originates from India. It is composed of coriander, cumin, star anise, turmeric, cardamom, cinnamon, nutmeg, cloves and black pepper. Slightly spicy, this multi-flavored blend is intended for the preparation of an Indian casserole dish, Le Korma. Also spelled kurma, kormaa, khorma, Korma is a Central Asian recipe made from braised meats or vegetables accompanied by water, broth, yogurt and cream or coconut milk. In England, Korma is a dish in a thick, slightly spicy sauce served in Curry Houses. It is usually accompanied by almonds, cashews and coconut milk and is one of the favorite Indian dishes of the British.
How to use Korma mix in cooking ?
Korma is often likened to a stewed chicken dish, but it can be made with mutton, beef, game or even just vegetables. It is often accompanied by yogurt but also cashew nuts, almonds, onions, tomato paste … The preparation of a Korma dish consists of 3 main steps:
– Marinate the meat and / or vegetables in a mixture of water and Korma spices for several hours.
– Braise the meat and marinated vegetables in a pan
– Simmer the dish for at least 1 hour
